Peppermint Mocha Muffins Recipe – Family Focus Blog


The holidays certainly are in full swing.  Not many flavors are more true to the season than peppermint.  This week the kids and I were planning their teacher gifts and decided to make them each a muffin, delivered in a pretty Christmas mug, with a gift certificate to the local coffee shop.  I didn’t want to make just any muffin though.  I wanted a scrumptious festive treat!  That’s when I decided to modify our favorite double chocolate muffin to come up with this Peppermint Mocha Muffins Recipe.  Each peppermint chocolate muffin looks pretty and tastes amazing!

Chocolate Peppermint Muffins

Peppermint mocha muffins are moist and flavorful muffins that combine the rich flavors of chocolate and coffee with a hint of refreshing peppermint. They are typically made with cocoa powder, espresso powder or coffee, peppermint extract, and sometimes chocolate chips or chunks. They are always a bit hit because there is just something about the magical combination of chocolate and peppermint flavor.

Ingredients:

  • 2 cups all purposes flour
  • 1 cup cocoa powder
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 2 1/2 tsp baking powder
  • 2 eggs plus 1 egg white
  • 1 1/4 cups raw sugar
  • 1/2 cup coconut oil
  • 1 1/2 cups Greek Yogurt
  • 1/2 cup whole milk
  • 1 tbsp vanilla extract
  • 2 tbsp instant coffee powder (optional- this is what gives it the mocha flavor, if you prefer just chocolate peppermint muffins leave it out)
  • 1 cup peppermint bark pieces
  • 1/2 cup semi sweet chocolate chips
  • chocolate syrup for topping
  • broken peppermint pieces for topping

How To Make Peppermint Chocolate Muffins:

Preheat the oven to 375 degrees Fahrenheit.

Mix together the dry ingredients and set aside.

Break up the peppermint bark into pieces. There are several brands available if you do not want to make your own.

Using a stand mixer whisk the eggs on medium speed and begin slowly adding the sugar, beating until the mixture thickens.

Add the oil, yogurt, milk, vanilla (and optional instant coffee powder) and continue beating until well mixed.

Fold the dry ingredients into the wet and stir in the peppermint bark pieces and the chocolate chips.

Line 2 jumbo muffin tins (12 total) with parchment wrappers (or cupcake liners) and evenly fill.  This batter is VERY thick, more like a dough.  Sprinkle the tops with additional peppermint bark pieces.

Bake the muffins in the preheated oven for 22-24 minutes or until the center comes out clean.  Remove from the oven and cool in the pan for several minutes before transferring to a cooling rack to cool completely.

After the peppermint chocolate muffins are cool, drizzle with chocolate syrup and top with crushed peppermint pieces. Enjoy them warm or at room temperature. Serve and enjoy!
